Can I book an appointment without the client phone number?
Yes. It is saved in Clients under their name, with no notices, and that name cannot repeat: if someone already has it, the form asks you.

Yes. In "New appointment", of the client details only the name is required. Without a phone or email the client will not get any notices, neither the confirmation nor the reminders, and the form tells you before saving: "They will be saved in Clients as “Neighbour”, without a phone: they won't get notifications."
That client stays in Clients marked "no phone". Since nothing else identifies them, their name cannot repeat: the next time you book "Neighbour", the form asks whether it is the same person, showing their visits and last visit, so all their appointments stay together. Names are compared ignoring capitals, accents and extra spaces: "José Pérez" and "jose perez" are the same.
If it is another person with the same name, tell them apart: add something to the name ("Juan from 3B", "Juan junior") or type their phone. If you cannot right now, "Save without a record" saves the appointment under that name without creating anything in Clients.
Do not want to keep them? Press "Don't save in Clients" and the appointment is booked with just the name. And for someone who walks in without giving any details, "Serve a walk-in" lets you leave both fields empty and logs them as "Walk-in client".
If you type a phone, it must have the digits of its country; otherwise the form tells you: "The phone number must have 9 digits. If you don't know it, leave it empty." Empty is better than made up: a fake number notifies nobody and ends up mixing different people in the same record. For a foreign number, pick its country in the prefix. Your booking website applies the same check to what your clients type. And if you type the number in the name, the form does not take it as a name: it warns you ("That looks like a phone number, not a name.") and offers "Move to phone".
The same rule applies when you create or edit a client in Clients: one without a phone or email cannot take another client's name, and the field explains it ("There is already a client called…") with a link to their record. A name that is a phone number also offers "Move to phone".
